Gordon Ramsay on the Place of Food

ONE+: Describe your thoughts on the role of food and the dining experience as a device for bringing people together.

GORDON RAMSAY: Everyone loves a great meal. When people are at home, or entertaining, I’m sure you’ve noticed that people always congregate around the kitchen. There’s something about food that brings people together. In my home, the kids and I bond over cooking. We go to the market every weekend and pick up fresh produce. Sunday, when the ladies are out, my son and I indulge in a “snack attack” of fries with spicy bean. My mum is the one who helped me discover my love for food and cooking, I would watch and help her. I still cook her recipes.

ONE+How does it best aid human-to-human communication?

RAMSAY: Food is the great equalizer. You can bring a group of people together from all walks of life and generations, and suddenly you are all speaking a common language, having a joined experience…and people are quite vocal and expressive, as they should be, about what they are eating and their dining experiences.

ONE+As one of the most recognized names in modern dining, how would you like to see group F&B/dining trends evolve?

RAMSAY: It’s important to stay seasonal rather than fashionable. You can never go wrong with fresh food cooked simply, using top quality and seasonal ingredients.

Check out the latest issue of One+ for more about F&B trends in the meeting and event industry and the latest goings-on with Ramsay's Las Vegas restaurants.

Please Let This Be a Trend

Following a tweet citing "Best. Conference. Snack. Ever." I had to find it.

The afternoon snack in question: blueberry pie milkshake.

Prior to a session on association publishing at digitalNow 2012, Walt Disney World Resort Executive Chef of Catering Operations Robert Gilbert joyfully asked if I'd like the blueberry or cherry variety, knowing full well either choice was tastefully decadent...that is, decadent to the taste buds, not simply decadent.

But this milkshake innovation is just the tip of the iceberg. Chef Gilbert and his crew are alchemists. (Stay tuned for molecular gastronomic adventures!)
